Creamy Chocolate Oats

Finally got this recipe up on the blog! A lot of you have asked how I make my everyday chocolate oats (literally every single day) and now the wait is over. It's not a revolutionising recipe or anything, just a simple but dangerously delicious and addictive one. Once you're stuck with one breakfast, it's hard to make a change. And let me tell you, I have been stuck with these oats for quite some time now. Hopefully you guys have more will power and determination than I have... 

Topped with banana slices, a peanut butter sauce and raw cacao nibs


Ingredients:

- 1/2 cup oats 

- 3/4 cup unsweetened almond milk

- 1/4 cup water

- 3 fresh dates (30-35 g)

- 1 heaped tbsp cacao or cocoa powder (or a tiny bit less if you find the taste too strong or bitter)

- salt to taste

How to:

1. In a small pot over low heat, bring the oats, almond milk, water and salt to the boil and let simmer. Stir often so the oats don't stick to the bottom.
2. As the oats are cooking, prepare your date paste. Peel and pit the dates, this is easier if you have really fresh, gooey dates or have soaked the dates in hot water for about 10 minutes beforehand.
3. Place the peeled dates in an itty bitty bowl or glass and mash them with a splash of water until smooth. (I like to use a shot glass for this!)
4. Transfer the date paste into the pot and stir until it's been well incorporated into the oats. 
5. Add the cocoa powder and stir again.
6. Let simmer until you have reached desired consistency, then spoon up in a bowl, add toppings of your choice and serve immediately!

As September progresses, it's gradually getting colder, the trees are changing colour and different kinds of pumpkins are starting to pop up here and there in the grocery stores. My favourite winter squash is the butternut squash; sweet, creamy and incredibly versatile! I promise to share my best pumpkin soup recipe with you in the future, but for now these pumpkin pie oats will have to do. They're well worth a try!

1/2 cup oats

1 cup almond milk

1 tsp pumpkin pie spice

3 tbsp puréed pumpkin or butternut squash

3-4 small dates, mashed or chopped or 1 tbsp liquid sweetener of choice

A pinch of salt

How to:
1. Add oats, almond milk and a dash of salt to a small saucepan and bring to the boil. 
2. Let simmer on a low heat for a few minutes until it has thickened up a bit. 
3. Add the pumpkin pie spice, pumpkin purée and dates and stir until they have been well incorporated. 
4. Cook for a few more minutes or until you've reached your desired consistency. pour the porridge into a bowl and top with yummy fruit, nuts or nut butter!

I love to cook my oats on the stove top, the taste and texture really is superior to those of microwaved porridge, but, let's be honest here. Cooking them the traditional way does take a bit more time. Most mornings, that extra time doesn't bother me at all. I'm an early bird (ok, maybe not, but I'd like to think that I am. However, I always set my alarm to the-whole-world's-still-fast-asleep-why-are-you-up o'clock, so what difference does it make?) and I don't mind spending some more time making my breakfasts taste good. But there comes a time in every 17-year-old's life when all you want to do is sleep. Well, several periods of time to be precise. When getting ready for school seems as impossible a task as climbing the highest mountains and when dozing off, sprawled out on the couch at 3 p.m., becomes a habit rather than an exception.  For me, one of those lazy sleep-cycles has just emerged and most days I just want to remain horizontal for as long as I can. What to do with the morning oats then? The oh-so-simple answer is; have them prepared the night before! Genius!

So why haven't you seen more of these über quick breakfasts on my Instagram then? Well to be honest, I've never really liked them, except for a recipe I tried a few months ago, for carrot cake overnight oats (from one of my best Instagram friends Meghan's blog! Thanks Meghs!) which I really liked. But yesterday, I decided to make a recipe of my own, just so that I could stay in bed for a few more (precious) minutes. Turns out that this recipe was actually so good that I have to share it with you guys! So here goes, Creamy Chocolate Overnight Oats!



Recipe:

1/2 cup oats

1/2 cup + 2 tbsp. almond milk

1/4 cup plant-based yoghurt of choice

1 tbsp chia seeds

1-2 tbsp liquid sweetener of choice (I used about 2 tbsp of date purée)

1/2 tbsp cacao or unsweetened cocoa powder

A pinch of salt (optional, but I've found it really elevates the chocolate flavour)

How to:

1. Simply mix all of the ingredients in a bowl or a pretty jar, and stir until they're evenly combined. Put in the fridge for a few minutes, then take it out and stir again so that the chia seeds don't clump up. 
2. Let the oats sit in the fridge until they've thickened up, preferably overnight so you have your breakfast ready to go the next morning! Top with fresh fruit, nut butters or whatever you prefer. Eat, and relish the fact that you get to have chocolate for breakfast. Vegan, gluten-free, healthy and absolutely scrumptious chocolate oats.

Motivation of The Day:  Get Plenty of Rest, Exercise Regularly & Eat Nutritiously

                                                                                                            
Today is definitely a recovery day....feeling tired, some fatigue, and honestly in need of a NAP.  I listen to my body when it speaks loudly to take a break GIRL.  Today I live through my clients workouts and enjoy the thrill of their exercise accomplishments during the session and when it is done.  Sleep is just as important to maintain my physique and overall health.  I love the feeling of being well rested, re-charged and ready to tackle my next exercise day full of spunk;)  I have to admit that part of me tries to fight the feeling and run out and do something....but I know I will pay the price with negative results.  So, listen I do...and REST I will....and GLADLY be thankful for the moment.  Now...let me just share my Oatmeal Adventures.  Oatmeal by itself is palatable to me...in fact, I enjoy the flavor as is.  However, I love to be creative with my oats by adding things like whey protein, flax meal, cinnamon, walnuts, and YES...I eat raisins.  I never place sugar on my oats...and try to AVOID that all together.  All my sugar is consumed through natural food products such as fruit for example.  I also LOVE hot breakfast and that has to do with how I was raised.  My Mom always made a hot breakfast before I went to school and to this day, I stick to that same "begin my day" routine.  Growing up, I enjoyed my oats with brown sugar, milk and sometimes butter.  This was also back in the day where playing outside from sun-up to sun-down was the "norm" and let me share that I played hard & burned lots of calories.  I am saddened that this "norm" is no longer the "norm" but has been replaced by sedentary lives starting very young....and in my opinion is a large contributor to the obesity problem that exists today. That is a whole other topic though. Back to the Oatmeal....When I want a Power Hot Breakfast, I place 1/4 cup cooked steel cut (my favorite) in my bowl, 1/2 to 1 scoop of vanilla whey protein powder, lots of cinnamon, a handful of raisins & walnuts, stir and ENJOY!!  What am I getting....My Fiber, Lean Proteins, Antioxidants, and Omegas....everything I need to fuel my machine....and the taste...FABULOUS! 

My Nutrition For The Day: 
1 cup of coffee
1-Protein Shake
2-Powered Up Oatmeal
3-Sweet Potato & 2 Stay Healthy Protein Balls       
4-B/S Chicken Breast on 1 slice Sprouted Bread
5-Steamed Veggies (lots) & Grilled White Fish
6-Protein Pudding (I am hooked)

Why Buy Them When You Can Bake Them!!!!

In today's economy where health bars/cookies can be anywhere from .88 cents to over $3.00, it is so worth a little bit of time to save sooooo much money. Even at .88 cents, your investment in the health bar/cookie is almost $20.00 per month if consumed daily. Also, being creative in the kitchen is so much fun, a fabulous stress relief, and you can involve your family and friends in the adventure. There is nothing better than a sample of a fresh cookie right from the oven...I think we can all agree on that. A fabulous note...you are in control of what you are consuming and even understand what you are eating. No lengthy food labels where words that seem to not exist in Websters ever venture into self baked healthy goods. The fats and sugars have been greatly reduced in this recipe, as well as any empty calorie white product ingredients. Guilt free enjoyment awaits the first batch out of the oven:) and the perfect power snack that you can carry with you on the go, giving no excuse to not fuel that body!!! Now let's get started.....


Stay Healthy Oat Protein Cookies

6 Tbsp "Real" butter @ room temp (no margarine...fake chemicals)

2/3 cup vanilla fat free yogurt

1 1/2 cup brown sugar

1 whole egg

1 Tbsp Pure Vanilla Extract

2 1/2 cups ground old fashioned rolled oats

1 cup vanilla whey protein powder (I have not tried this with a soy product)

3 cups old fashioned rolled oats

1 1/2 tsp baking soda

2 large handfuls of Craisins (dried cranberries)

1 large handful flaked coconut

1 12 oz bag semi sweet chocolate chips or white chocolate chips (you may choose to use 1/2 bag)

Preset oven temperature to 300 degrees. Have ready a cookie sheet and line with parchment paper. If no paper, then spray the cookie sheet with PAM. I personally like easy clean up by tossing the paper when I am done.

Dry Ingredients:
Place oats in your blender, and grind until flour consistency and until you reach 2 1/2 cups in a separate mixing bowl. Add the 1 cup of vanilla protein powder, and 1 1/2 tsp baking soda.
Wet Ingredients:
Place soft butter in your mixer bowl, along with vanilla yogurt and cream together. Add the brown sugar and continue to blend until creamy. Add the egg, and continue to mix thoroughly. Add the pure vanilla extract, and continue to cream together.
Together:
Time to add the dry ingredients to the wet ingredients. Slow the mixer down, and slowly pour the dry ingredients into the wet ingredients until thoroughly combined. Now, add 3 cups old fashioned rolled oats, mix; add the coconut and mix; add the Craisins and mix; and lastly add the chocolate chips and mix slowly. You should have a wonderful cookie dough ready for baking at this point.


I use a large tablespoon to make large cookies. This recipe will create 20 large cookies or approx 80 tsp size.

Scoop a large tablespoon of the dough onto your prepared cookies sheet and continue this process until the sheet is full. Place in your pre-heated oven and bake between 15-18 minutes. Be careful not to overcook these, as they will be dry. There should be a slight give to touch the top of the cookie in the oven and only very little browning. They will continue to cook on the sheet when you remove them from the oven. Transfer to a cooling rack and repeat the baking process until all the dough is used. Don't forget to lick the bowl:)
